Becky’s Black Bean Salad

Ingredients

  • 6 cans drained and rinsed black beans
  • 2 red bell pepper
  • 2 green bell pepper
  • 2/3 cup green onion
  • 20 ounce frozen corn
  • 2/3 cup chopped cilantro
  • 1 cup lime juice
  • 2 tbsp dijon
  • 4 tbsp ground cumin
  • 2 tsp minced garlic
  • 2 tsp black pepper
  • 1 tsp salt
  • 1/2 cup olive oil

Directions

Combine 1st 6 ingredients
Combine remainder separately to make dressing
Mix the two and refrigerate preferably at least 2 hours
